Michael Ros Winery: Beautiful Texas Wines, Good Friends, and a Little Piazza Magic

You know those places you want to tell your friends about and then immediately make plans to go together? Michael Ros Winery is one of those places for me.

I love their wine, but I also love what Michael and Rosann Mitrione are creating here in Fredericksburg. There’s thoughtfulness behind the whole experience: the setting, the welcome, and the care that goes into each bottle. It’s the kind of place where a glass of wine becomes a reason to slow down and enjoy the people you’re with.

A Little European Charm in the Texas Hill Country


Just a mile off Highway 290, Michael Ros feels wonderfully tucked away. Their 38-acre property brings together vineyard views, pecan trees, and a tasting room inspired by a European town square. The curved building embraces a central fountain and piazza, while glass walls and an upstairs vantage point keep those beautiful Hill Country views part of the experience.

And because this is Texas, you might even spot Longhorns wandering on the neighboring property. A little Italy, a little Hill Country- I love that combination.

The details matter here. Damaged trees have been repurposed into tasting-room tables, and reclaimed water is cleaned and reused for irrigation. As someone who appreciates thoughtful design, I love seeing beauty and care for the land come together.

Mike and Rosann planted their first vineyard in the Texas High Plains in 2018. Today, their wines are made from 100% Texas grapes, using their own vineyards and other Texas growers. Winemaker Tim Drake helps turn that fruit into a wonderfully varied collection.

Tomato-based pasta, Italian meatloaf, or a really good pizza.

2022 Piazza Rossa

A Sangiovese-led blend with Cabernet Sauvignon and Merlot, showing fig, jam, and pecan notes.

There’s plenty to celebrate in that lineup. The 2023 Albariño earned Double Gold and Best of Show recognition at the 2024–2025 San Antonio competition. The 2023 Dolcetto received a Judge’s Selection at TEXSOM 2026, while 2021 Sangiovese and 2022 Piazza Rossa took gold there. Their 2024 Sangiovese Rosé also earned Best of Show Texas Rosé at the 2025–2026 San Antonio competition.

A Reason to Stay a Little Longer

Live music is scheduled Thursdays from 4–7 p.m. and Saturdays from 2–5 p.m.

Thursday Locals Night keeps the winery open until 7 p.m., with 10% off a pizza when you purchase a bottle of wine. Friday Happy Hour, from 3–6 p.m., features two rotating wines at 30% off glasses and bottles.

Looking ahead, their October 19, 2026 wine-pairing dinner at 6 p.m. will feature Chef Joe’s menu and an early taste of 2022 Midnight, a Petite Sirah and Alicante Bouschet blend. Tickets are $130 per person, with membership discounts available.

There’s also a Chocolate & Wine Pairing throughout October, plus their November 14 car show, benefiting Tunnel to Towers Foundation.
